*Alcohol cannot be skipped completely, so please note that alcohol intolerant people should be aware of this.
Here are the results of a previous experiment conducted at the Niigata Brewing Experiment Station. The alcohol concentration does not decrease when the cake is boiled, but when it is steamed, the alcohol concentration decreases. 105°C fine steam heats the alcohol inside the sake lees. The rising steam reduces the alcohol.
So our recommendation is to steam and skip the alcohol. Here are some specific instructions on how to skip the alcohol.
Steaming method to remove alcohol.
1) Cut sake lees.
Cut the sake lees into pieces no thicker than 2 cm and no larger than 5 cm in size. (The thinner the thickness, the better the alcohol jumps)
(ii) Steam for at least 20 minutes with steam.
Heat with plenty of steam for at least 20 minutes.
(iii) Paste with additional water.
After steaming, add water to make a paste of the desired consistency, which is convenient for use in cooking.
It may be a bit time-consuming, but this is the easiest way to eat sake lees.
Try this method if you want to make sure you get rid of the alcohol.
For easy alcohol removal, use a microwave oven!
If you are short on time, you can also use a microwave oven. However, it is harder to remove alcohol than steam, and the aroma and taste of alcohol tends to remain, so try it out first, but only in small quantities.
How to skip alcohol in a microwave oven.
<If you have a microwave steamer.
1) Cut sake lees into pieces no thicker than 1 cm and no larger than 3 cm in size, and cook on 600 W for 4~5 minutes.
(ii) When finished, leave it for 5~10 minutes until the alcohol is removed along with the vapour and it is ready to use.
<If you don't have a microwave steamer.
If you do not have an electronic steamer, you can use a microwave-safe bowl and colander!
(1) Fill the bowl below with 80㏄ of water and place the sake lees on the colander.
*Lightly wet the sake lees with water to prevent them from burning.
(2) Cover with plastic wrap and cook at 600 W for 1 minute.
*Some models may overheat. Test several times as it depends on the size of the bowl.
When the mixture is warm, remove the plastic wrap and leave it to stand for 5-10 minutes until the heat is removed.
Although it leaves a more alcoholic taste than steaming in a steamer, it is useful when you want to use a little bit of it in your cooking.

What happens to sake lees when alcohol is removed?
Sake lees that have had the alcohol removed by steam can be used to remove the distinctive alcoholic odour, allowing the natural sweetness and flavour of the rice to be felt. Some sake lees have a natural sweetness like that of sweet chestnuts or potatoes.
However, once the alcohol is removed, sake lees have a poor shelf life. In addition, it becomes more easily mouldy because of the added water. After the alcohol has been removed, store in a clean container in the fridge, sterilised by boiling, and try to use it up within 3-4 days. It is convenient to freeze any unused portion.
If you can't use it all up, you can put it in a zipped bag, stretch it flat and freeze it. You can break them up and add them to dishes as much as you need to use them.
