Proteases are classified into serine proteases, cysteine proteases, aspartate proteases and metalloproteases according to the characteristics of the amino acid sequence of the catalytic site. Cysteine proteases are enzymes that catalyse the "thiol group" of the "cysteine" structure and are believed to be involved in immunity and bone metabolism. Typical examples are papain in papayas, ficin in figs, actinidin in kiwis and bromelain in pineapples.
