About Tsunan, a town with unexplored territory
Tsunan Town, Niigata Prefecture, is a small town with a population of 9,000 situated on the border with Nagano Prefecture.
Tsunan Brewery is located in the mountains of the nature-rich town of Tsunan, and wild antelopes occasionally visit the property.

The area receives 3-4 m of snow every year and is located in one of the heaviest snowfall areas in Niigata Prefecture.

About Tsunan, a new brand of sake produced in Tsunan
The brand name 'Tsunan', which will be launched this year, aims to coexist not only with the rice, water and people of Tsunan, but also with the forests and animals of the town. The visual motif on the label will be the 'Japanese serow'. The quality of the sake is divided according to the colour name, and the initial launch line-up will start with four types: white, red, indigo and golden.

Brewing in a snow-covered environment is said to be a good environment for making good sake, as the snow entangles and removes dust from the air, keeps the low temperature and high humidity constant, and allows easy control of micro-organisms.

Tsunan Brewery is dedicated to producing sake from Tsunan-grown rice called 'Gohyakumangoku', which is produced in the region. Tsunan's rice paddies are located at an altitude of around 300 metres and the temperature difference between day and night is large, making the rice suitable for sake brewing with a large white core and large grains. The source of the brewing water comes from the snow that falls on the mountains at an altitude of 2,000 metres, and the area is blessed with rich, limpid water that has been selected as one of the 100 best waters in Japan. This water is 'ultra-soft', with fine, mellow particles, and is an excellent brewing water that stores the nutrients of the earth.

Tsunan Brewery's sake is brewed slowly using the three-stage brewing method. The sake has a light, full flavour and a refreshing aftertaste that goes down well with food, and is highly regarded as a sake that goes well with food.
It has won numerous awards, including a gold medal at the National New Sake Competition, an International Wine Challenge (IWC) medal at an international wine competition, and a gold medal at the London Sake Challenge for three consecutive years.
