The only baking oven in the world, built with the previous generation.

The baking kettle, which was not photographed in its entirety at the time of the interview, was hand-built by the president, Mr Niino BUNICHIRO, together with his father, Mr ETSURO, about 50 years ago. After much trial and error, we have recreated the process of baking over a charcoal fire, turning it back and forth over time, using a machine," BUNICHIROexplains. The baking oven is about 20 metres long, and the delicious, golden-brown appearance of the ika-aki as they emerge from the oven is a testament to the company's commitment to the process. The only reason for sticking to charcoal is to bring out the flavour of the rice.
