In Tsunan Town, rice harvesting has been active since the beginning of September ✨The harvesting of sake rice 🌾Gohyakumangoku, which is used in Tsunan Brewery's sake brewing, has also been successfully completed.
Gohyakumangoku is considered an early variety and is harvested somewhat earlier than Koshihikari.
It has large grains and heart white. This variety is particularly suitable for making koji rice. The harvest of Uonuma Koshihikari rice, the representative rice of Niigata Prefecture, is in full swing. Tsunan Brewery began the challenge of brewing sake using 100% Uonuma Koshihikari from the year before last, and began selling it as GO GRAND CLASS Uonuma Koshihikari Edition🌟 this spring. Please try this sake too! After the rice harvest, the drying, conditioning and polishing process continues, and finally the rice arrives at the brewery. This year, the snow melted early and there were concerns about a lack of water. Fortunately, according to the farmers producing the Gohyakumangoku rice, the weather did not affect the harvest too much and we were able to harvest the rice smoothly at ☀️. The season's production will begin in about two months' time! The new sake will be ready in mid-December 🍶.
If you can't wait until the new sake is available, we recommend the seasonal 🍁 Hiyayoroshi! It is on sale at the shop. Enjoy the unique taste of the season as a souvenir of your visit to the brewery 🍶.
