Firstly, we try to use ingredients from Uchino. For example, miso soup is made with miso from the Marukaku Brewery in Uchino, and tofu is made with tofu from Yamagai Tofu.

Apart from using ingredients from Uchino, I also place importance on 'mood and season' when deciding on the menu. I believe that people's body cravings change depending on the season and their mood, so I decide on the menu based on what is available at that time of year and what I want to eat this week.
